Un cop netes, posa-les a bullir amb el m\u00ednim d\u2019aigua possible, una mica de sal i unes gotes de suc de llimona per a evitar que s\u2019ennegreixin.<\/li>\n\n\n\n<li>Mentrestant posa a bullir una olla amb aigua i sal i cou la pasta fins que quedi \u201cal dente\u201d.<\/li>\n\n\n\n<li>Un cop cuites les carxofes, escorre-les i talla-les en trossos petits.<\/li>\n\n\n\n<li>En una paella gran sofregeix, amb l\u2019oli d\u2019oliva, l\u2019all tallat a l\u00e0mines i els encenalls de pernil. Quan comencin a estar cuits afegeix al sofregit la ceba, els tom\u00e0quets deshidratats i la carxofa. Un cop daurats, afegeix el vi blanc i l\u2019orenga i cou a foc lent fins que s\u2019hagi evaporat l\u2019alcohol.
