Evidentment hi ha variacions i segur que cada fam\u00edlia tindr\u00e0 el seu toc personal.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Ingredients_per_a_10_persones\"><\/span>Ingredients per a 10 persones<span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 Pollastre<\/li>\n\n\n\n<li>2 ossos d\u2019Espinada salats (o 1 fresc i 1 salat)<\/li>\n\n\n\n<li>Orella salada o Peu salat (1\/4 de maneta)<\/li>\n\n\n\n<li>500g de conill de Vedella<\/li>\n\n\n\n<li>1 Os de Vedella del genoll<\/li>\n\n\n\n<li>1 Os de Pernil<\/li>\n\n\n\n<li>1 Bra\u00f3 o 1 rodanxa de Xai<\/li>\n\n\n\n<li>2 Botifarres negres<\/li>\n\n\n\n<li>1 bola de Sag\u00ed<\/li>\n\n\n\n<li>150g de Cigrons (en remull el dia abans)<\/li>\n\n\n\n<li>6 Pastanagues<\/li>\n\n\n\n<li>2 Naps grans<\/li>\n\n\n\n<li>\u00bd Api<\/li>\n\n\n\n<li>2 Xirivies grans<\/li>\n\n\n\n<li>2 Porros<\/li>\n\n\n\n<li>6 Patates grosses<\/li>\n\n\n\n<li>1\/2 Col<\/li>\n\n\n\n<li>400g de pasta de Galets<\/li>\n<\/ul>\n\n\n\n<p>Per a la pilota:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>500g de Carn de Porc picada<\/li>\n\n\n\n<li>3 Ous<\/li>\n\n\n\n<li>2 Grans d\u2019All<\/li>\n\n\n\n<li>Julivert<\/li>\n\n\n\n<li>1 polsim de Canyella<\/li>\n\n\n\n<li>Sal, Pebre i Farina<\/li>\n\n\n\n<li>Molla de Pa (es pot remullar amb llet)<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Preparacio\"><\/span>Preparaci\u00f3<span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Posa totes les carns, ossos i verdures en fred a l\u2019olla. Excepte el sag\u00ed, la pilota, la botifarra, la col, els cigrons i la patata. Afegeix aigua (uns 6 litres) i posa al foc<\/li>\n\n\n\n<li>Per a fer les pilotes has de barrejar tots els ingredients excepte la farina i treballar amb les mans amassant la barreja. Fes diverses pilotes i reserva-les<\/li>\n\n\n\n<li>Quan comenci a bullir l\u2019aigua afegeix el sag\u00ed i els cigrons<\/li>\n\n\n\n<li>Passades 2 hores posa-hi la col<\/li>\n\n\n\n<li>Passats 20 minuts m\u00e9s, enfarina les pilotes i afegeix a l\u2019olla amb les patates, i deoxa bullir uns<\/li>\n\n\n\n<li>En \u00faltim lloc, 10 minuts abans de parar el foc, incorpora la botifarra negra<\/li>\n\n\n\n<li>Un cop estigui el caldo fet, en una safata posa tota la carn en una banda i els vegetals a l&#8217;altra vigilant que no es trenquin els trossos. Els ossos sense carn i la xirivia no cal posar-los<\/li>\n\n\n\n<li>Cola el caldo i posa en una altra olla a bullir. Incorpora-hi la pasta i cou el temps indicat al paquet.<\/li>\n<\/ol>\n\n\n\n<p>Us recomanem que no saleu l&#8217;escudella fins que no estigui arribant al final de la cocci\u00f3 i l&#8217;hagueu tastat pr\u00e8viament, tenint en compte que tant els ossos com les verdures deixaran anar els seus sabors i els seus minerals, entre ells el sodi, i que l&#8217;endem\u00e0 aquest brou s&#8217;haur\u00e0 concentrat, de manera que el qu\u00e8 avui sembli poc salat dem\u00e0 pot ser-ho excessivament.<\/p>\n\n\n\n<p>Nota: si es vol fer l&#8217;<strong>escudella de carbassa<\/strong> nom\u00e9s cal que feu bullir uns trossos de carbassa quan el&nbsp;brou est\u00e0 fet i colat,&nbsp;tot triturant&nbsp;a continuaci\u00f3.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Recepta d&#8217;escudella i carn d&#8217;olla L&#8217;escudella i la Carn d&#8217;Olla s\u00f3n els dos plats m\u00e9s t\u00edpics de les festes nadalenques a Catalunya.
