ara sala-les perqu\u00e8 vagin deixant anar l&#8217;amargor.<\/li>\n\n\n\n<li>Pela i talla les patates a l\u00e0mines igual que les alberg\u00ednies i reserva.<\/li>\n\n\n\n<li>Mentrestant, renta, pela i talla en brunoise la ceba, la pastanaga i l&#8217;all, i posa-ho a sofregir<\/li>\n\n\n\n<li>Renta les alberg\u00ednies i eixuga amb paper absorvent.<\/li>\n\n\n\n<li>En una paella fregeix les l\u00e0mines de patata primer, i les d&#8217;alberg\u00ednia despr\u00e9s, i reserva-tot<\/li>\n\n\n\n<li>Quan el sofregit comenci a agafar color, sala al gust, afegeix el vi i deixa que s&#8217;evapori l&#8217;alcohol<\/li>\n\n\n\n<li>Ara afegeix el tom\u00e0quet, la farigola i l&#8217;orenga a el sofregit, i posa una cullereta petita de sucre per corregir l&#8217;acidesa del tom\u00e0quet, i una mica de sal; deixa que es vagi cuinant perqu\u00e8 s&#8217;evapori tota l&#8217;aigua del tom\u00e0quet i quedi concentrat.<\/li>\n\n\n\n<li>D&#8217;altra banda sofregeix la carn en una paella, condimentada amb sal i pebre, i quan estigui llesta incorpora-la al sofregit; remou durant un parell de minuts perqu\u00e8 es barregi tot b\u00e9 i ja pots retirar de foc.<\/li>\n\n\n\n<li>Finalment prepara la salsa beixamel lleugera: en una paella posa a escalfar part de la llet, mentre d&#8217;altra banda, en fred, barreges la resta de la llet amb la maizena per dissoldre-ho b\u00e9 i que no quedin grumolls; quan la llet estigui t\u00e8bia, sala al gust i afegeix la barreja de llet amb maizena, i sense deixar de remenar, porta a ebullici\u00f3 fins que espesseixi.<\/li>\n\n\n\n<li>En una safata per forn posa les l\u00e0mines de patata a sota de tot, a continuaci\u00f3 fes una capa d&#8217;alberg\u00ednies i a sobre una capa de la carn;
