Fixa\u2019t si van necessitant m\u00e9s aigua i ves afegint-la.<\/li>\n\n\n\n<li>A les 3 hores posa a semi coure a part la morcilla i el xori\u00e7o en una cassola petita amb aigua. No ha de bullir fort. Veur\u00e0s que anir\u00e0 deixant anar part del greix, i el rebutjarem.<\/li>\n\n\n\n<li>Quan vegis que el xori\u00e7o i la morcilla han comen\u00e7at a inflar-se, treu-los de la cassola on estaven i incorpora\u2019ls a la cassola amb els callos. Deixa que cogui tot junt 1 hora m\u00e9s.<\/li>\n\n\n\n<li>A banda, prepara un sofregit amb el pebrot net i tallat a daus, la ceba ben picada i els alls picadets.<\/li>\n\n\n\n<li>Quan estiguin ofegats, sala al gust i afegeix un rajol\u00ed de conyac. Deixa que s\u2019evapori l\u2019alcohol i incorpora el tom\u00e0quet triturat i una mica m\u00e9s de pebre vermell. A foc suau ves remenant i que redueixi el tom\u00e0quet. Quan estigui llest, passa-ho pel t\u00farmix i reserva.<\/li>\n\n\n\n<li>Quan acabin les 4 hores de cocci\u00f3 dels callos, escorre\u2019ls reservant l\u2019aigua de la cocci\u00f3, i incorpora els callos al sofregit. De nou amb el foc enc\u00e8s suau, deixa que cogui tot junt uns minuts: afegeix uns cullerots de l\u2019aigua de cocci\u00f3 de la tripa, tot remenant per incorporar tots els sabors i deixa que redueixi la salsa.<\/li>\n\n\n\n<li>Prova de sal i de picant, i rectifica al gust si cal.<\/li>\n\n\n\n<li>Pots servir-los a al moment o guardar per dem\u00e0 i que concentri el sabor.
